Roasties

Oven baked roasties


12 Potatoes (peeled & roughly the same size)

Fat to cover the bottom of the roasting tray - you could use duck fat or dripping fat, or a good local rapeseed oil

100g Fine Semolina - seasoned with 1 tsp Salt

Ingredients

  1. Set oven to 200ºc and cover the bottom of a roasting tin with the fat of choice.

  2. Place in oven to heat.

  3. Par boil the potatoes and drain and dry.

  4. Toss in the seasoned semolina.

  5. Add to the hot oil and roast, turning occasionally until crisp and golden and cooked through – about 45 minutes.
