Maple Glazed Gammon
Maple & Allspice Glazed Gammon
2kg Causeway Prime Cooked Gammon
75ml Maple Syrup
50g Dark Brown Sugar
50ml Cider Vinegar
250ml Apple Juice
1 Heaped tsp Ground Allspice
Ingredients
Remove the rind from the gammon and score the fat in a criss cross. Place in a roasting tray.
Place the maple syrup, brown sugar, cider vinegar, apple juice and allspice in a pan and boil to a spoon coating syrup consistency. Brush some over the gammon and place in a 190oc oven. Keep brushing regularly for an hour or until gammon is cooked through. Rest before slicing.
